Superfood Swirl Banana Bread Recipe

This banana bread recipe is super easy to make and can be boosted with so many of our products. Try it with any of our latte blends, matcha, or shroom shield!

 

Ingredients:

  • 3 very ripe bananas
  • ¾ cups maple syrup
  • ½ cup melted coconut oil
  • 1 tsp. vanilla extract
  • 1 cup all-purpose flour (or GF flour)
  • 1 cup oats 
  • 1 tbsp. cinnamon
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup vegan chocolate chips
  • 1 tbsp. cacao powder
  • 2 tbsps. Shroom Shield (or 2 tsps. Latte Blend of choice or 1 tbsp. max of Pure Matcha)

*Matcha/Matcha Turmeric/Original Turmeric don't require cacao powder

 

Instructions:

  1. Preheat oven to 350 degrees and line a loaf pan with parchment paper
  2. In a large bowl, combine the wet ingredients and mash the bananas (you can also blend for a smoother texture)
  3. In a blender, combine the dry ingredients (everything except the cacao powder and Shroom Shield) and blend until mixed
  4. Mix the dry ingredients into the bowl with the wet ingredients
  5. Split the batter into two bowls! There should be  ⅔ of the mixture in one bowl and in the other the remaining ⅓
  6. Mix in the cacao powder and Shroom Shield to the bowl containing ⅓ of the mixture (add a splash of milk if it's too thick)
  7. Option to fold in chocolate chips to your batters
  8. Alternate the batters as your drizzle them into the baking pan to create a marble effect
  9. Bake for around 40 minutes or until a fork comes out relatively clean 
  10. Let cool and enjoy!
