We thought we had seen it all when it came to matcha recipes, but this one took it to the next level and we had to share. Follow along to learn how to make these Matcha Vegan Cheesecake Bars created by Sophia Valenzuela (@sophiav_). Not only does she share her secret to the perfect cheesecake (hello cookie butter crust!) but she also discusses her Golden Hour and what makes her Instagram community so special!
Cookie Butter Crust:
1 sleeve of Trader Joe's Speculoos cookies (or Lotus Biscoff cookies)
4 tbsp vegan butter of your choice
1/4 cup Coconut milk
splash of vanilla extract
1 to 2 organic lemons (depending how tart you like)
1/2 cup of coconut yogurt
1 to 2 squeezes of Organic Raw Blue Agave (add more to sweeten)
8 oz vegan cream cheese
2 tsp Golde Pure Matcha Powder
1. Crumble one sleeve of cookies to a fine milled texture (I placed mine in a Stasher bag then used a mason jar to press down on cookies)
2. Pour crumbles into a bowl with butter and mix
3. Pack this mixture inside of your cheesecake pan with the same mason jar (wrapped in parchment paper) making sure to go up the sides of the pan a little
4. Place the crust into the freezer to harden while you prepare and blend the filling ingredients together
5. Pour filling on top of the crust and freeze for 4-5 hours
6. Place in the fridge to thaw for however long you can wait
7. Grab from fridge, cut into squares, and enjoy!

Hi Golde family! I'm a 22 year old latina content creator based in OC California. My instagram @sophiav_ is a little bit of everything (skincare, vegan recipes, fashion, beauty) but a community filled with so much love nonetheless! I'm definitely known for being a Golde Pure Matcha fanatic and in my truest form I am applying a face mask while watching The Office. I also love doing pilates at home and taking walks in the park while listening to my favorite podcasts.
What is your favorite GOLDE product and how do you use it?
I love all of my Golde products SO MUCH but if I had to choose the one I use the most, it would definitely be the Pure Matcha. The beauty of pouring your Pure Matcha compote into an ice cold cup of oat milk never gets old to me. Slow matcha mornings are my favorite.
What is your Golden Hour?
My Golden Hour is when I take my walks in the park and tune into how I'm feeling. I love this time to self-reflect and slow down into my life. On these walks I like to manifest, speak well-being into my life, and give my energy to the good.
What do you love about your instagram community? Or, how did you build your online community and made friends through it?
What I love most about my instagram community is the safe space we have created to connect to one another about all things. I'm so thankful to be surrounded and uplifted by a community of people who see the importance of discussing racial injustice and social issues on a daily basis (amongst the skincare and fashion content we all know and love). Learning together how to be more mindful imperfect humans to ourselves and each other is what fulfills me. I love how we can be transparent as a community in trying to navigate this time in our lives. Shopping black owned businesses, being sustainable when you can, trying vegan recipes, being kind to yourself, and voicing up for human rights are all things I'm passionate about and I feel very fortunate to have a platform with others who see the beauty in all of it too.
