Lemon Turmeric Poppyseed Bites

Try this treat: an easy, gut-friendly twist on classic flavors by our friend @mackenziereid. No baking required! Makes 15 bites.

Ingredients:

  • 1 cup oat flour
  • 1/4 cup Original Turmeric Latte Blend
  • 2 tsp poppyseeds
  • Zest of 1 lemon
  • Juice of half a lemon
  • 1/4 cup maple syrup
  • 1/2 cup cashew flour
  • 1/2 tsp salt
  • 1/4 cup milk of choice
  • For rolling:
    • 1/4 cup coconut shreds
    • Zest of 1 lemon
    • Pinch poppyseeds

Method:

  1. In a medium bowl, combine flour, Original Turmeric Latte Blend, lemon zest + juice, maple syrup, cashew butter, salt, and milk. Stir well to combine.
  2. Freeze for 10-15 minutes, then roll into balls using a cookie scoop or tablespoon.
  3. Coat in coconut, lemon zest, and poppyseed mixture. Keep in the freezer + enjoy!
